The month of May




 In case you guys have forgotten what this space is really for.....let me reintroduce you to Westin (age 3, likes to spell 'Water' and 'Pizza' and sometimes 'Cake'. LOVES to check out dinosaur books from the library and loves his little brother) and Webb (age 10 months, has 8 teeth, loves to squeal at this big bro, eat mum mum's and whatever mama is having for breakfast. He's gettin' mobile, as you will see in upcoming posts!).

I realize that it is June and I'm writing a blogpost about May......judge away, people, but first realize that in this past little bit, this lady has finished up her first solo course, written two grants, revised a paper, undergone pre-tenure review--oh yeah, all the while being a rockstar mom and wife (ahem). In truth, if it weren't from my wonderful husband, my sanity would have been a bygone of yesteryear, memorialized and burnt in effigy.....
I mean, really, who could wallow in stress when coming home to these two??

Happily in May, we had the great fortune of having a lovely visit from G-Pops and D. They happened to come up the week after my pre-tenure review and I was feeling festive--of course, whenever they come into town, I feel festive. We went on adventures in Sioux Falls (Webb is quite the little shopper! Happily, Westin never gets tired of the zoo or being outside). G-pops and Dalen cooked a wonderful Mother's Day dinner for D and I, complete with molten chocolate cake desert--YUM! It was a lovely visit and we're very appreciative of G-Pops and D for making the trip......

Walking ol' Copper dog and Triceratops

It's still a bit chilly here in the Dakota tundra but that does not hinder our walks with Copper dog and Triceratops. Today we headed a few blocks down the street to campus. On the weekends we like to walk around the USD campus because it is so quiet and peaceful. The "no puddle left behind" policy was enforced today. We stomped them all!

Cookies Cookies Cookies!🍪🍪🍪🍪🍪🍪🍪🍪🍪

Well, it's May and we woke up to several more inches of snow today. Before we go play outside in what I now think is the last snow of the year, we decided to make cookies. I haven't made homemade cookies in forever. Westin and I grabbed ingredients from the pantry and went to work. Didn't have an egg...no problem. I substituted applesauce and you would never know. I really like Bob's Red Mill 5 grain hot cereal for breakfast so I thought they would make a great cookie. The cookies turned out soooooo tasty. Butter and brown sugar don't make this cookie super healthy but using 5 whole grains as the base sure makes them wholesome.
